Zanut are very much terroir focused winery. Their vineyards, the largest of which is 1 hectare, are situated on a variety of positions, soil types (marl, slate and sandstone) and heights (80m-140m). 80% are on terraces with others straddling flat parts on the top of hills. Yields are purposefully kept low (1.5-2kg per vine) and planted with cover crops between vines. All wine is made from spontaneous ferments with indigenous yeast and treated to minimal intervention.
